🛒 Ingredients
½ tablespoon olive oil
½ cup onion, chopped
1 cup celery, chopped
3 cloves garlic, minced
1 pound ground beef
1 (6 oz) can tomato paste
1 (28 oz) can diced tomatoes, with juices
8 cups beef broth
4–6 large potatoes, peeled and diced
½ teaspoon Italian seasoning *see Pro Tips
Salt & pepper to taste

👨🍳 Instructions
In a large pot, heat olive oil over medium heat. Add onion, celery, and garlic. Cook for 2–3 minutes until softened and fragrant. Remove and set aside.
In the same pot, add ground beef. Break it apart and cook until browned. Drain excess fat if needed.
Return the sautéed veggies to the pot. Stir in tomato paste and cook for 1 minute, stirring constantly.
Pour in diced tomatoes (with juices) and beef broth. Stir well.
Mix in diced potatoes, Italian seasoning, and salt & pepper to taste.
Bring to a boil. Reduce to a light boil and cook for 20–25 minutes, or until potatoes are tender.
